Can anyone point me in some good info/Tutorials, or just have advice on ajax and laying out good security measures.

Security for what? You should give out a bit more info about what kind of issues you may look like. Some things are doable, others are not... for example, you can't prevent people to send whatever info they want through AJAX, yet you can check them on the server
